Vinification: | The fruit was chilled and whole bunch pressed, with 95% of the wine fermented in a combination of new, one, two and three year old French oak hogsheads (55% New oak). 5% was fermented in temperature controlled stainless steel tanks to maintain freshness. 15% of this wine also completed malolactic fermentation to soften the palate and add extra complexity. The oak matured component was aged for 6 months, with regular lees stirring to enhance the structure of the wine prior to bottling. |
